Advanced Cake Decoration Class

If you are one of my beloved readers, most of you know that I have a huge ♥♥♥ for baked goodies: Cakes, Cupcakes, cookies and other heavenly desserts. I admit I am no expert and I still have a lot to learn that is why I am making things happen one at a time. Recently I just finished Master Cake Decorating Class and now I am taking things to the next level. I want to learn how do fondant and sugar paste that is why I enrolled for Advanced Cake Decorating Class at Emelita W. Galang Culinary Arts Studio.

The course consists of 8 half day sessions which will be held weekly. I already finished 2 sessions so I have 6 more to go. Here are some pictures taken from Mrs.Galang's facebook page.

Blue Wedding Cake

This is my first ever wedding cake design when I attended Wilton's Master Cake Decorating Class last month. Unfortunately we used Styrofoam instead of real cake but hopefully soon, I'll try to bake and design a cute 3 tiered cake. What do you think? Be gentle with the comments since this was my first time hihihi :) Hope you like it :)


I already made a reservation for Fondant and Gum paste class which will start on July 27. Wish me luck and stay tuned for more cake adventure!

What kept me busy?

I am really sorry for lack of updates for the past months…I know I've been missing and was not able to give you any heads up. But I am really trying to squeeze in a little time to update this blog. You might be wondering what kept me busy.

Most of you know that I really love and enjoy baking. I do bake and accept orders but I have to admit that there’s still so much for me to learn. And one of the major things that I really need to improve on is decorating cakes. Last November 2010 I have decided to take my baking skills to the next level I’ve enrolled in a Master Cake Decorating (Wilton Method) Class. Unfortunately, at that time there was no available class and I still have to wait for months before they re-open the class again. At that time there was an on going Fondant class and they have to finish the course before the Master class re-opens.

To cut the long story short, I started the class last March 16; it was a 10 half day session and classes are held once a week. And because of this I have to move my days off from Saturday-Sunday to Wednesday – Sunday, since my class is every Wednesday. I was a little hard for me to keep up with this schedule because every Wednesday we have a call meeting at work, so even though it is my day off, I still have to report to work just to attend the meeting with the client then go home after. If you’re working for a BPO company, you really have to be very flexible with time. I guess we really need to do little sacrifices…It is very tiring but I assure you it’s all worth it!

I was able to finish the course last week and on our graduation day we have to make a 3 tier wedding cake and we should come up with our own design. This is it guys...I'm really happy and I guess I can say that I am on the right track...this is what I really want and I am truly happy that I am starting to make things happen.

Red Velvet Love

For the past 4 years I'm always accepting orders from my mom's friends, they seem to love my cheesecakes and carrot cake so much that they consistently order every year. But last December, I want to try something new - Red Velvet cupcakes! And you wanna know why? It's simple, it's the latest craze!


It's also a good thing that my mom keeps her old, tried and tested cake recipes and believe me it's really convenient. I followed her original recipe but I confess I made some adjustments specially the cocoa, I only used a little because I don't want my red velvet cuppies to look reddish brown. I want the red to be very vibrant!

This was the first RV cupcake that I baked. I didn't get the "vibrant red" that I wanted to so I still have to tweak the ingredients a little bit to get the color that I desire but of course, I have to make sure that the texture and taste of the cake would still be the same - moist and velvety! 

I was able to bring some of the cupcakes in the office to check if my officemates would like it. I also asked them for any suggestions or if there are any improvements that are needed. And I am happy that they were all pleased and liked it!

And then friends and co-workers started placing their orders....

I was able to bake a total of 21 dozen Red Velvet Cupcakes last Christmas and 12 dozen last New Year.

27th!


Last December 17 was my 27th birthday. At the start of the day it didn't turn out right BUT as the hour passes, it was getting better and better and at the end of the day ~ it was the B-E-S-T!

7:00 am ♥ prepared breakfast and "baon" for mommy and sheela since they have no time to cook at the store. After helping out at the kitchen, time to water the plants. Sweep the dried leaves and dirt in front of the house.

8:48 am ♥ slept for a couple of hours, prepared the things that i have to bring along with me:

And of course, the most important of all, Kikay kit -

11:30 am ♥ Called Sheela and asked her to pick me up since we are going to have lunch at the store together, Mommy insisted that I need to eat pancit since it is my special day - long life you know hihihi.

1:30 pm ♥ Went to a bridal boutique in plaridel for Ate Carol's Wedding since I'm one of the secondary sponsors. Then, went to pine rose to buy some stuff mommy asked me to buy.

2:00 + pm (i can't remember the exact time) ♥ Finally, I'm at SM and I was just in time I think. Finally Sweets didn't have to wait for me since I'm always late. Christmas shopping - Part 1
4:30 pm ♥ have to go back @ the store to pick up mommy and Sheela since 5 pm is our closing time. At the same time, Sweets told me he needs to go home as well. After I got home, time for retouch coz you have to look fresh all the time ( wink...wink...). Then I left again....off to NiQ's house.

7:10 pm ♥ I'm at Nikki San's house to pick up my pinky cupcakes she baked for my special day. Texted Sweets that I'm on my way to SM again...Then, just when I need my phone-- Battery Empty! It was so frustrating and annoying!

7:48 pm ♥ Finally I'm back at SM. Christmas shopping - Part 2.

9:00 pm ♥ Dinner with Sweets and got my birthday present and this actually made my day! The gift was well perfect but what made it super special was the effort on how he got my present, it was "to the highest level!" woohoo! hihihi

I just got the November issue of Yummy Magazine. In this month's issue, they're presenting 44 highly recommended yummylicious cakes that would satisfy our cravings and keep us company this holiday season.

I would like to share these heavenly creations so I will be posting all the 44 cakes but I will be doing this by batch.

Helen's Moist Chocolate Cake
The chocolate cake is just as good and just as fudge-y.

Skyscraper yeah!

Do you remember the cookbook I was telling you about? I have it finally! Few days after our shopping spree, I've decided to buy the book after payday. I realized that, all the cheesecake recipe that are in the book are actually worth it and I would never find any other cheesecake cookbook that have all the yummy and unique cheesecake recipe. The cookbook has a lot to offer me, it has a lot of yummy treats in store for me. So there, after deciding on whether to buy or not to buy the book, I immediately sent an IM to Sweets and told him that I will buy the book and ummmm and....and.....if he can go get it for me before he reports to work that night ( because work on a graveyard shift). He asked me if he can just do it the next day since it was our day off the next day but, I insisted to buy it immediately. And because Sweets knew that I was so super duper excited about the book, that night, he left early just to go to the mall and buy me my precious cookbook!



This is my new favorite book - Junior's Cheesecake Cookbook. The book features their 50-To-Die-for recipes for New York Style Cheesecake. Junior's is a very popular restaurant in New York and their specialty? - Cheesecakes. They've been baking cheesecakes since the 1950s, over the years their bakers have perfected it all from the ingredients, techniques, and of course the recipes too. Most of the secrets and techniques are all in this book. Now, let me ask you. Do you think buying this book was all worth it?


I've never been to the US so I have never tried their popular New York Style cheesecake. And, you wouldn't know if the recipes in the book are really yummylicious unless you've tried it yourself. So, last November 1, I tried to bake one of their SkyScraper Cheesecakes recipe.

My new masterpiece! Lemon Custard Cheesecake Ü
-I actually made some changes with the recipe so that I could call it my Own Recipe! This is my own version of Junior's Lemon Coconut Cheesecake. It's just mouthwatering...yummy!

What made this a unique from all other cheesecakes is because it it is a cake within a cake! This is a two layered cake. The first layer is a traditional home made cake, then enhanced them with rich, thick, creamy layer of original New York style cheesecake. This type of cakes are two day affairs. The cheesecake is baked on the first day and frozen overnight, the put together with the cake layer the following day. It takes a lot of work, patience and love but hey, it's worth the wait!

Scrumptious Desserts!

Don’t you just love desserts? Me~ I love it sooo much. I have been craving for some delicious dessert for almost 2 weeks now. And to satisfy my sweet tooth’s special request, I spent the whole afternoon baking my special treats. I was able to bake 2 cakes. The first cake I baked was my newest recipe, Choco Ripple Cheesecake. This is my own version of Perfect Loaf’s Marbled Cheesecake. The rich blend of sweetness from the chocolate and soft, mild tasting white cheese that just melts in the mouth is just perfect and it compliments each other. Even Bubbles was so excited while I was baking. She was licking my feet the whole time while I was baking. But sorry Bubbles, the cake’s not for you, it’s mine! (Evil grin).

So there, while waiting for the cake to set, I got bored again. Well 1 hour of waiting for the cake to bake is no joke, specially when your too excited to see the finish product. So there, Mommy asked me to try to bake a Mango Cake Roll for her. Well you see, I haven’t tried to roll a cake before, so this was my first time to do it. Good thing, I was able to watch a video in YouTube on how to properly roll a cake, thanks Sweets for the suggestion. He’s the one who told me to try to check some baking videos in YouTube instead of watching Jeff Dunham and Achmed. So there, before Dinner I was able to finish both cakes. Want to see my heavenly masterpiece? Good thing I have my phone ready to take a shot of my creations.
